Sometimes I really miss my kitchen. I wonder if my culinary tools pine away for me in storage the way I do them.
Surely not, being that they are inanimate objects, but it is a romantic thought.
I had planned this post for two weeks ago. These Caramel Banana Muffins are just too good to not share with the world. However, an unfortunate blow out on my make shift pastry bag resulted in some ugly muffins.
I blame unrealistic beauty standards for my food. Were they any less delicious? NO! They were fantastic, just ugly, but ugly muffins need love, too.
Hurricane Patricia has pushed some soggy weather into my area, trapping us all in the house. What better time to try to make this post again than now, as we all sit in the gloom and damp waiting for the rain to pass. Why not fill the house with the happy smell of fresh banana muffins?
Caramel Banana Muffins
1/4 cup shortening
1 cup sugar
1-1/2 cups mashed ripe banana (about 3 large)
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoon butter
1/4 cup packed brown sugar
2 tablespoons milk
1/2 cup confectioners sugar
In a mixing bowl, cream together shortening and sugar. Add egg and beat well. Add bananas and vanilla and mix well. Combine flour, baking soda and salt, then add to creamed mixture. Mix until combined.
Fill lined muffin cups 3/4 full
Bake at 350°F for 20-25 minutes, or until a toothpick inserted in the center of the muffin comes out clean.
Allow to cool 5 minutes on a wire rack before removing from the pan to cool completely.
In a small saucepan, melt butter over medium heat. Add brown sugar and milk, then bring to a boil. Cool slightly.
Whisk in confectioners sugar. Sift beforehand to prevent lumps in your drizzle. Extra bonus points if you can keep it from getting everywhere when you stir it in.
Transfer drizzle into a piping bag or a small resealable sandwich bag with a small snip in the corner. Drizzle over muffins.
Makes 9 regular muffins OR 6 jumbo muffins
Don’t worry if your muffins come out perfectly imperfect. These muffins are commonly referred to as Banana Cupcakes at my house. They are sweet, moist and utterly delectable, even if they sometimes turn out ugly as sin. They will please your tummy just as well as their beautiful counterparts.
So, don’t hate on those ugly muffins. Show them some love.
